Basic Food & Beverage Services
The IAMI/GUEST Basic Food and Beverage Services course focuses on such important duties of a yacht steward/ess as table setting, drink and food service, and delivering the dining experience to the standards higher than in 5-star hotels. The course covers many aspects of outstanding onboard service including etiquette, menu presentation, understanding dietry requirements, mise-en-place, order of service, silver / butler/ plated and other types of services etc. On the second day of the course, the trainees put their skills into practice by setting the table and serving a lunch to a number of guests onboard a superyacht.
Basic Food and Beverage Service course provides valuable skills and knowledge to aspiring stews who wish to work onboard superyachts, solo stews, and interior management wishing to set guidelines for training junior crew.
The course forms a part of the 5-day GUEST / IAMI Introduction to Interior Program (Yacht Steward/ess training). The completion of this program allows to obtain the full set of certificates required for GUEST Hospitality Certificate of Competency.

About the course
Basic Food and Beverage Services is a comprehensive 2-day course that touches upon a number of aspects pertinent to the duties of a yacht steward or stewardess including
- Understanding service etiquette, menu & dietry requirements
- Mise-en-place
- Order of service (dinner procedures; guest seating; water/bread/wine service; main/second course, dessert, breakfast and lunch service)
- Different service styles (silver, plated, butler, synchronized, cloche, buffet, canapes)
- Cutlery (identification, luxury brands used on superyachts; full set example; washing & polishing)
- Glassware
- Crockery
- Tray service & use
- Napkins, tablecloths, runners & placemats (color & design; texture; placement; rings, extra napkins; tablecloth; condiments etc)
- Table setting (basics, prior preparation, symmetry, centrepiece, chargers, candles, themes)
- Introduction to food safety
Please note: Food Safety Level 2 course is not included in this module.
Onboard practice
Whenever possible, most of the practical activities of the Yacht Steward/ess training course, including Basic Food and Beverage Services module, are completed onboard a motoryacht (M/Y) located nearby the classroom.
Live lunch
On the second day of the training, Yacht Stew trainees put all their acquired skills and knowledge into practice. Onboard a motoryacht, they make all the required preparations to welcome guests - mise-en-place, table decorations, beverages, hot towels, cutlery, glassware etc. Guests invited by Seascope France are usually representatives of the superyacht industry - crew agents, chief stews, interior managers, captains, yacht management specialists etc. During live lunch, the course trainees serve food and drinks practicing menu presentation and synchronized, silver and other types of food service.
Certification
Upon successful completion of the assessments, the student will be issued an IAMI GUEST Certificate, which will specify the competencies achieved throughout the module. The certificate is sent in the digital format from IAMI Certification platform to the email address indicated in the course registration form.
IAMI / GUEST Program
Basic Food and Beverage Services module is a part of introductory yacht interior training (Yacht Steward/ess course). The Yacht Steward/ess training is a 5-day course that gives trainees a comprehensive overview of yachting industry and working on yachts (Introduction to Yachting and Yachting Life) and includes two other modules - Basic Wine, Bartending & Mixology, and Basic Housekeeping and Laundry. GUEST / IAMI Program is designed to meet the standards of the superyacht industry, and all the training is specifically tailored to the tasks carried out by junior interior crew. The full set of IAMI/GUEST interior introductory training certificates allows their holders to apply for GUEST Hospitality Certificate of Competency.
